Amaranth, Copperhead
Amaranthus sp. 45 days leaf; 90 days grain. Very ornamental copper-colored seed heads on 4-5' plants. Early maturing variety with light, almost golden colored seeds. Amaranth was a staple crop of the Aztecs and its seeds and leaves are known to be some of the most nutritious of food crops.
